As much as I’d love to make a delicious meal every day, I just don’t have the time or the energy. I found this incredible cookbook and it changed how cook easy to grab snacks on the go. Every single time I make these delicious and super healthy treats, they disappear overnight! They are so yummy I guarantee even picky eaters will enjoy!
Cookbook: Energy Balls: Improve Your Physical Performance, Mental Focus, Sleep, Mood, and More! by Christal Sczebel, C. H. N. | Recipe: Lemon, Almond, and Chia Muffin (pg.26)
Part of my New Year’s Resolution is to eat healthier and take care of myself consistently. These tasty treats are 100% vegan, and Gluten-free so I don’t have to compromise my health for great flavor. I tent to double up on the recipe and freeze half the batch because they go so fast. This also helps with time management and I always have healthy food on demand. Enjoy!
Helpful Hint: Chop cashews in food processor prior to adding all ingredients, it will help when mixing everything together and is easier on your machine. You can also add frozen blueberries or blackberries for a variation of this tasty treat.
