Part of my New Year’s Resolution is to eat healthier and take care of myself consistently. These tasty treats are 100% vegan, and Gluten-free so I don’t have to compromise my health for great flavor. I tent to double up on the recipe and freeze half the batch because they go so fast. This also helps with time management and I always have healthy food on demand. Enjoy!

Helpful Hint: Chop cashews in food processor prior to adding all ingredients, it will help when mixing everything together and is easier on your machine. You can also add frozen blueberries or blackberries for a variation of this tasty treat.
